CHOOSING THE RIGHT SAUCEPAN FOR THE GAS BURNERS
Use saucepans with the following diameters
Auxiliary burner
Semi-fast burner
Fast burner
Extra fast burner
Double-crown burner

16 to 22 cm
18 to 28 cm

Adjust the flames so that they do not lick up the side of the saucepan. RIGHT WRONG Do not use a saucepan with a convex or concave base. CONVEX CONCAVE Do not leave an empty saucepan on the gas.
Do not use saucepans that partially cover the knobs.
Wok grid
Only hobs with a "double crown" burner are fitted with a special grid to take a wok. This grid makes it possible to use pans with a concave base. In conjunction with the "doublecrown" burner, the flames are better distributed around large pans such as large-diameter woks and paella pans.
RECOMMENDATIONS :
Using a gas-cooking appliance produces heat and humidity in the room in which it is installed. Your kitchen should be well
ventilated. Keep all natural vents open or install a mechanical ventilation device (mechanical cooker hood). Intensive and prolonged use of the appliance may necessitate extra ventilation - opening a window for example or producing more efficient ventilation by increasing the power of the existing mechanical ventilation (a minimum air input of 2 m3/hour per kW of gas energy is required). Example : hob 4 gas burners Total power : 0, 85 + 1, 5 + 2, 3 + 3, 3 + 4 = 11, 95 kW. For "matt black" items, use vinegar instead of bleach, then oil carefully and wipe with kitchen roll.
What pans to use
Always use stable, flat-based pans, except when using the "double-crown" burner with its wok grid (depending on model). Do not let pan bases or handles cover the control knobs. ____________
Cooking tips
Green vegetables (spinach, broccoli, sorrel, etc) or vegetables rich in sulphur compounds (cabbage, onions, etc) should be cooked without a lid in plenty of boiling water; they will cook more quickly, and will keep their green colour (some vegetables only), vitamin and minerals content. Pasta, rice, cereals, etc absorb water during cooking and increase in volume; cook them in plenty of boiling salted water in order to dilute the starch they contain. Make sure you use a sufficiently large pan to avoid boiling over; cook without a lid (there is a risk of foaming and therefore of the pan boiling over). Mushrooms should be poached in a small quantity of boiling water, with salt, butter and lemon juice. ____________

General maintenance Tips
As soon as the water boils, turn down the gas ; you will limit the risk of spills. Put a lid on the saucepan before bringing to the boil : this is time saving and therefore energy saving. Clean your burners regularly : this guarantees a perfect working order. Dry the burner caps properly before putting them back.
